ABOUT THE RECIPES
I gathered many recipes and their backstories during The Great Mediterranean Comfort Food Tour. Through five months in ten countries, I took notes and videos, and interviewed cooks in their kitchens. Many spoke English, but sometimes I was working through an online translation program, which can be a pretty slippery business. I strove for accuracy, but measurements were usually by eye or hand; almost nobody ever reached for a measuring cup or scale. Some ingredients were subtly different than those we'd find at home.
